Many Maritime honey lovers feel that wildflower honey is the best-tasting.
Our Nova Scotian bees make lots of honey from asters and goldenrod. The
commonly available Cosman and Whidden brand (creamed) tastes like wildflower
honey. This late summer honey crystalises, so the beekeepers either "seed"
it with the small crystals that make the creamy texture, or they stir it
while it is crystalising, causing the small crystals to form. Very yummy,
and stays on the toast!
