Exquisite Apple Pie

Line a pie plate with your favourite pastry. Fill with sliced apples.

In a saucepan, mix:
3/4 cup white sugar
1 tsp flour
3 Tbsp. water
1 Tbsp. butter

Stir mixture well. Cook over medium heat, and continue to stir to prevent sticking. Pour over the apples. Top the pie with a layer of pastry, and bake at 350 to 370 deg. F., for approx. 45 minutes until golden brown and bubbling.

Apple Walnut Cake

4 cups chopped apples
2 cups sugar
2 eggs
1/2 cup vegetable oil
2 tsp vanilla
2 cups sifted flour
2 tsps soda
2 tsps cinnamon
1 tsp salt
1 cup chopped walnuts

Combine apples and sugar, toss together lightly, and let stand.
Beat egg, add oil and vanilla.
Mix flour, soda, salt, cinnamon, and add to egg mixture alternatelly with apples and sugar.
Bake one hour, 350 deg. F

Apple Sauce Cake

1 cup brown sugar
3/4 cup butter
1 1/2 cups unsweetened apple sauce
1 cup raisins
1/4 lb mixed peel
2 1/2 cups flour
1 tsp cinnamon
1/2 tsp nutmeg
2 tsp soda
1/4 tsp salt

Cream butter. Add sugar. Dissolve soda in apple sauce and add with raisins and peel to first mixture. Add flour sifted with salt and spices. Bake in oiled and lined baking tin in moderate oven of 350 deg. F., for 35 to 40 minutes.

Dried Apple Fruit Cake

2 cups dried apples
1 cup molasses
1 cup brown sugar
1 cup milk
1 cup butter
1 tsp soda
2 cups raisins
4 cups flour
1 cup currants
1 cup dates (stoned)
2 eggs
1 tsp cinnamon
1 tsp mace
1 tsp nutmeg
1 tsp cloves
1 tsp ginger
1 tsp allspice

Soak apples overnight, then chop finely and boil in molasses for 1 hours. Cool and add soda.

Cream butter and sugar; add eggs. Sift flour with spices and add 2 cups of mixture to butter-egg mixture. Add raisins, currants and dates. Add apple and molasses mixture. Add alternately, milk and remainder of flour mixture. Bake in oiled and lined tins in slow oven of 325 deg F for 3 hours.

Oatmeal Apple Squares

1 3/4 cups rolled oats
1 cup brown sugar
1 1/2 cups flour
1/4 tsp baking soda
3/4 cup butter or margarine
3 cups apples, diced
1 Tbsp butter
2 Tbsp sugar
1 tsp cinnamon

Mix together: rolled oats, brown sugar and baking soda. Cream together with butter or margarine. Divide mixture in half, and press one part firmly in a greased pan (9" x 9").

Mix together: sugar and cinnamon. Cover oat mixture in pan with apples. Dot with butter or margarine. Sprinkle sugar-cinnamon mixture over apples.

Top with second half of oat mixture. Bake at 350 deg F., 40 minutes. . Cut into squares.

Apple Crisp

6 large apples
1/2 cup brown sugar
1/2 tsp cinnamon

Topping
1 cup flour
1/2 cup brown sugar
1/4 pound butter

Slice apples. Combine 1/2 cup sugar and cinnamon. Sprinkle over apples.

For topping, crumble flour, brown sugar and butter with fingers. Sprinkle over apples.

Bake in 9 inch square pan in 400 deg F oven, for 1 hours. (Butter makes crisp).

Coddled Apples

2 cups boiling water
1 to 2 cups white or brown sugar
8 apples
lemon juice

Making syrup by boiling sugar and water 5 minutes. Core and pare apples; cook slowly in syrup, covered closely. Watch apples carefully. When tender, lift apples out of syrup and set aside. Add a little lemon juice to the syrup and pour over the apples. The cavities may be filled with jelly or raisins.

Apple Butter

1 lb apple pulp
Juice and grated rind of 1 lemon or 1 orange
1 1/2 cups white sugar
1 quince

Wash, pare and core apples and quince. Cover parings with water. Cook for 1/2 hour, drain and add juice to apples and quince. Cook until apples and quince are soft. Press through a sieve. Add sugar, grated rind and juice of lemon or orange, and cook until thick and clear.

Baked Apples

Wipe, core and remove slice from ends of apples. Place in baking dish. Fill centres with sugar and cinnamon (1 tsp cinnamon to 1 tsp sugar) and dot with small pieces of butter. Pour water around apples (2/3 cup water to 6 apples). Bake in moderate oven of 350 deg F, for 30 to 45 minutes. Baste every 10 minutes. Place in serving dishes, and pour juice over each apple. Serve with cream. Excellent with whipped cream. Exquisite with vanilla ice cream.

Poached Apples Supreme

Core and pare 8 apples of uniform size
Poach until tender in the following syrup
1 cup apricot jam
1/2 cup water
3/4 cup sugar

Remove to baking dish
Fill centres with candied peel, nuts or raisins. Pour syrup over all

Make meringue of 3 egg whites, 6 Tbsp sugar, 3 Tbsp marshmallow whip. Cover apples with meringue, sprinkle with granulated sugar. Bake at 375 deg F, till very light brown. Before serving, garnish with grated bittersweet chocolate
